This copycat of Taco Bells Mexican Pizza is a must! Insanely good, super easy, and quick to make, and it is the best copycat recipe of the famous Taco Bells Mexican Pizza. Even if Taco Bell removed this from their menu again, I am not anymore worried because I can easily throw this delicious Mexican Pizza at home!
INGREDIENTS
1 (15-ounce) can of refried beans
1 pound lean ground beef
1 packet of taco seasoning
8 taco-size flour tortillas
Vegetable oil, as needed
2 c. shredded Mexican cheese blend
1 (10-ounce) can of red enchilada sauce
TOPPING:
Green onion, sliced
Tomatoes, diced
How to make Copycat Taco Bell Mexican Pizza
Step 1: Prepare the oven. Preheat it to 400 degrees F. Using parchment paper, line a baking sheet.
Step 2: Cook the ground beef in a large skillet over medium-high heat, breaking the beef up as it cooks until no longer pink. As needed, drain the excess grease. To the pan with the ground beef, add the taco seasoning and 1 c. water. Bring everything to a boil. Once boiling, decrease the heat and simmer until most of the liquid has been cooked off.
Step 3: Heat 2 tbsp vegetable oil in another skillet over medium heat. Once hot, lay the tortilla one at a time and cook for about 3 to 4 minutes until crispy, flipping often. As needed, add more oil. Set the browned tortillas aside.
Step 4: In a microwave or on a stovetop, warm the refried beans.
Step 5: On 4 tortillas, evenly spread the refried beans and place the ground beef on top. Over the filling, place the rest of the tortillas, covering each with 2 tbsp of the enchilada sauce. Then, sprinkle with half c. of the cheese.
Step 6: On the prepared baking sheet, place the filled tortillas. Bake in the preheated oven for about 8 to 10 minutes or until the cheese has melted.
Step 7: Remove from the oven when done and serve the Taco Bell Mexican Pizza immediately with tomatoes and green onions. Enjoy!
