How to make Copycat P.F. Chang’s Dan Dan Noodles
Step 1: In a 2-cup measuring cup or bowl, whisk the soy sauce, wine, oyster sauce, sugar, and chicken stock until the sugar has dissolved. Set aside.
Step 2: Into a hot skillet, place the ground chicken and cook over medium heat, stirring until cooked through.
Step 3: In a wok or large skillet, heat the oil over medium-high heat. Once the oil is hot, add the chili paste, garlic, and green onion. Cook while stirring for about 5 seconds.
Step 4: To the wok, add the chicken. Stir and cook for 10 to 15 seconds over medium-high heat.
Step 5: Stir in the reserved soy sauce, and liquid and let everything simmer for about 20 to 30 seconds.
Step 6: Whisk the cornstarch in cold water until combined, then stir this into the wok. Allow the mixture to simmer for another minute while stirring constantly until thickened.
Step 7: On individual serving plates, ladle the cooked noodles and top them with the chicken mixture. Serve immediately, garnished with bean sprouts, chopped green onions, and/or julienne-cut cucumbers. Enjoy!
