Ingredients:
4 skinless/boneless chicken breasts, pounded to ¾ inch thick
Salt/Pepper, to taste
2 tbsp vegetable oil
Marinade: (Shortcut- Use Italian Salad Dressing)
½ c olive oil
½ c ranch dressing
3 tbsp Worcestershire sauce
1 tsp distilled white vinegar
1 tsp lemon juice
1 tbsp minced garlic
½ tsp pepper
Parmesan Crust
¾ c Parmesan cheese, chopped into bits
¾ c Provolone cheese, chopped into bits
6 tbsp Buttermilk Ranch salad dressing
5 tbsp melted butter
2 tsp garlic powder
1 c panko breadcrumbs
Directions:
In a mixing bowl, add all the ingredients for the marinade. Stir until well mixed.
In a large resealable bag, add the chicken breasts. Pound to about ¾-inch thick with a meat mallet.
Season the chicken breasts with salt and pepper.
In another resealable bag, add the chicken breasts as well as the marinade. Shake the bag until the chicken breasts are well coated.
Allow the chicken to marinate for about 30 minutes or overnight inside the fridge.
Place a cast-iron skillet on the stove and turn the heat to medium-high.
Add 2 tbsp of oil and allow it to become hot.
Add the chicken breasts and sear for about 5 minutes or until they turn golden brown.
Remove the chicken breasts from the skillet onto a clean plate.
Parmesan Crust
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
In a mixing bowl, add all the topping ingredients aside from the panko. Place it inside the microwave and heat for 30 seconds.
Stir until well combined, then add the panko crumbs, and put it back inside the microwave. Heat for another 15 seconds.
Add the mixture over the chicken breasts and spread it evenly.
Place it inside the preheated oven and bake for 5 minutes or until the cheese has melted completely.
Serve hot and enjoy!

This dish is best served with mashed potatoes.
