Ingredients:
Crumb topping
½ c brown sugar, packed
1 c all-purpose flour
6 tbsp butter, melted (if hot, cool before using)
1 tsp ground cinnamon
Muffins
⅓ c vegetable oil
2 Eggs
3 overripe bananas, mashed
1 ½ c all-purpose flour
⅔ c granulated sugar
1 tsp ground cinnamon
1 tsp baking soda
½ tsp salt
2 tsp vanilla extract
Glaze
1 tbsp cream or milk
½ tsp vanilla extract
½ c powdered sugar
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Line with muffin liner and muffin pan.
For the Crumb Topping:
Add brown sugar, cinnamon, and butter into a mixing bowl. Beat until well blended.
Add the flour and whisk until well mixed.
For the Muffins:
Add the bananas, salt, cinnamon, and sugar into a mixing bowl. Stir until well mixed.
Add the eggs, vanilla extract, and oil. Beat until well mixed.
Add the baking soda and flour, then beat until just combined.
Fill the prepared muffin pan with the batter.
Cover each top with the crumb topping.
Place it inside the preheated oven and bake for about 15 minutes or until a toothpick comes out clean after inserting it in the middle.
Remove from the oven and allow the muffins to cool completely at room temperature.
For the Glaze:
Add milk, vanilla extract, and powdered sugar into a mixing bowl. Stir until well blended.
Drizzle the glaze over the cooled muffins.
