The best recipe of pudding you will ever taste! This is not your typical pudding because this is filled with the nice flavor of coconut! Yes, you read it right. Feel the tropical taste in this pudding. I am so glad that I decided to give this a try because I never would have known how awesome this is! Serve this with a nice iced tea or hot coffee and you have yourself a snack to remember. Enjoy!
Ingredients:
2 tablespoons butter
⅓ cup confectioners’ sugar
1 cup white sugar
4 large eggs eggs
1 egg yolk
2 (14 ounce) cans coconut milk
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
2 tablespoons coconut extract
1 ½ cups flaked coconut, divided
½ cup fresh coconut
1 (1 pound) loaf French bread, cut into 1 inch cubes
Directions:
Step 1: Prepare the oven and preheat to 165 degrees C or 325 degrees F.
Step 2: Brush melted butter in a 9×13-inch baking dish and sprinkle with confectioners’ sugar.
Step 3: In a large mixing bowl, add in the eggs, egg yolks, sugar, nutmeg, coconut extract, cinnamon, and coconut milk. Stir until well mixed.
Step 4: Add in ½ cup of fresh coconut and 1 cup of flaked coconut. Stir until week mixed.
Step 5: Add in the bread cubes and toss until coated completely.
Step 6: Transfer the mixture into the greased baking dish and let it sit for 30 minutes.
Step 7: Place inside the preheated oven and bake for 25 minutes or until cooked through.
Step 8: Remove from the oven and sprinkle with the rest of the flaked coconut.
Step 9: Put the baking dish inside the oven and bake for another 25 to 30 minutes or until the middle bounces back when touched.
Step 10: Remove from the oven and let it sit on a wire rack to cool.
Step 11: Serve and enjoy!
