Ingredients
1 green onion, chopped
1 egg whisked with 1 tbsp of water
¼ c. grated mozzarella
½ tsp garlic salt
½ c. crumbled feta (buy a block and crumble it yourself)
A few grates of fresh nutmeg
1 puff pastry sheet, defrosted
1 10-oz. package of frozen chopped spinach, defrosted and squeezed dry
How to make Spinach Feta Pinwheels
Step 1: Combine the egg and water. Set aside.
Step 2: Mix the cheeses along with the onion and seasonings. Set aside.
Step 3: On a lightly floured surface, roll out the puff pastry to flatten the seams. Then, brush with the egg wash.
Step 4: On top, place the cheese mixture. Break the spinach apart and evenly spread this on the surface. Make sure to leave approximately 1-inch space on one of the short sides.
Step 5: Roll up the pastry like a jelly roll beginning on the short side that is covered with filling.
Step 6: Using parchment, line two baking sheets. Into ½-3/4-inch pieces, slice the roll and place them on the prepared sheets.
Step 7: Place in the fridge or freeze. Once cooled, place in 400 degrees preheated oven and bake for about 15 minutes or until the Pinwheels are golden.
Note:
For best results, make sure to chill the sliced pinwheels before baking.
