Talk about a complete and heavy meal! This classic Shepherd’s Pie is packed with potatoes, carrots, peas, and meat! A total family favorite. Enjoy!
Ingredients:
For the mashed potatoes:
½ c sour cream
¼ tsp garlic powder
½ c salted butter, 1 stick
5 lbs. of potatoes, peeled and chopped into 1 or 2-inch pieces
⅓ c milk, or to taste
½ tsp seasoning salt
¼ tsp onion powder
1 tsp salt
½ tsp pepper
For the beef mixture:
4-5 medium carrots, (about 1 and ½ to 2 c)
1 c shredded cheddar cheese
1 & ½ c frozen peas
1 medium onion, chopped (about 2 c)
1 tbsp cornstarch
1 & ½ c beef broth
4 tbsp salted butter, ½ stick
1 & ½ tsp Worcestershire sauce
1 tsp Better Than Bouillon paste
1 & ½ lbs. of ground beef
1 & ½ tsp salt, or to taste
½ tsp pepper, or to taste
Directions:
In a large pot with water, add the potato slices and cook for about 20 to 25 minutes over medium heat until easily pierced with a fork. Drain and put the potato slices back into the pot.
Add ½ cup of butter over the potato slices, then mash them until smooth.
Add seasoning salt, onion powder, garlic powder, ½ tsp pepper, 1 tsp salt, sour cream, and milk. Stir until well blended. Cover the pot.
Place a large skillet on the stove and turn the heat to medium.
Add 4 tbsp of butter and allow it to melt.
Add the carrots and onions, then sauté for 8 minutes or until soft and translucent.
Add the ground beef, then cook for 5 minutes or until crumbly and brown. Discard any accumulated grease. Add the frozen peas.
Mix cornstarch and beef broth, then pour it into the skillet together with Worcestershire sauce. Stir until well blended.
Cook everything for 5 more minutes over high heat. Sprinkle salt and pepper to taste.
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Transfer the meat mixture into a 9×13-inch deep casserole dish and spread it evenly.
Spread the mashed potatoes over the meat mixture layer.
Sprinkle the cheddar cheese on top of the mashed potatoes.
Place it inside the preheated oven and bake for about 30 minutes or until done. Broil for 2 more minutes.
