This Chicken Fajita Pasta is an amazing one-pot weeknight dinner! A classic, hearty dish with chicken, pasta, and bell peppers cooked in a simple creamy fajita sauce.
Ingredients
2 pounds boneless, skinless chicken breasts, cut into 1” pieces
4 tbsp olive oil, divided
1 yellow onion, diced
1 green bell pepper, sliced into 1” long strips
1 yellow bell pepper, sliced into 1” long strips
1 red bell pepper, sliced into 1” long strips
10 ounces can of diced tomatoes
8 ounces dried bow tie pasta
4 cloves garlic, minced
2 c. chicken stock reduced-sodium
½ c. heavy cream
Kosher salt and black pepper to taste
2 tbsp fajita seasoning or taco seasoning
Garnish:
Sour cream
Lime wedges
Chopped cilantro
Sliced green onions
How to make One Pot Chicken Fajita Pasta
Step 1: In a Dutch oven or large, deep skillet, heat 2 tbsp olive oil over medium-high heat.
Step 2: Add the chicken pieces to the skillet once the oil is simmering and sprinkle with half of the fajita seasoning. Cook the chicken for about 2 minutes. Flip and continue to cook the other side for additional 2 minutes or until golden brown. To a plate, transfer the seared chicken and set aside.
Step 3: To the Dutch oven, add the rest of the 2 tbsp olive oil. Then, add the onion along with the bell peppers and the rest of the fajita seasoning. Cook for approximately 4 to 5 minutes, stirring often until just tender.
Step 4: Next, stir in the garlic and cook for 30 seconds more. To the plate with the chicken, transfer the vegetable mixture. Set aside.
Step 5: Add the chicken stock along with the heavy cream, diced tomatoes, and pasta. To taste, season with some salt and black pepper. Scrape the bottom of the pan using a wooden spoon to release the brown bits. Bring the mixture to a boil. Decrease the heat once the mixture is boiling. Put the lid on and continue to cook for 10 minutes more, stirring often.
Step 6: Most of the cooking liquid should be absorbed after 10 minutes of cooking. You can cook for another 3 to 5 minutes if it is not.
Step 7: Return the chicken and vegetables to the pot. Stir until heated through.
Step 8: Serve the chicken fajita pasta immediately, garnished with some diced green onions, chopped cilantro, a squeeze of a lime wedge, and a dollop of sour cream. Enjoy!
