Ingredients:
1 c (250ml) water
¼ c (56grams) unsalted butter, diced into small cubes
1 tablespoon (13grams) granulated sugar
¼ teaspoon salt
1 c (141grams) all-purpose flour (scoop and level to measure)
1 large Egg
½ teaspoon vanilla extract
Vegetable oil, for frying
For the Coating:
½ c (100grams) granulated sugar
¾ teaspoon ground cinnamon
Directions:
Step 1: In a shallow dish, add in the cinnamon and ½ cup of sugar. Whisk until well combined.
Step 2: Place a large pot or skillet on the stove and turn the heat to medium-high.
Step 3: Add in 1 ½ inch of vegetable oil and allow it to become hot over 360 degrees F.
Step 4: Meanwhile, in a large saucepan, add in the butter, salt, and sugar. Turn the heat to medium-high and allow the mixture to boil.
Step 5: Add in flour and turn the heat down to medium-low. Stir until well combined.
Step 6: Remove from the heat and transfer the mixture into a large bowl. Allow it to cool at room temperature for at least 5 minutes.
Step 7: Add the egg and vanilla into the bowl with the flour mixture and use an electric mixer to beat until smooth.
Step 8: Transfer the mixture into a 16-inch piping bag.
Step 9: Pipe the mixture into the hot oil.
Step 10: Fry for 2 minutes on each side or until golden brown.
Step 11: Place the fried churros on a plate lined with paper towels to drain any excess oil.
Step 12: Place the fried churros into the cinnamon-sugar mixture and toss until well coated.
Step 13: Serve with caramel sauce or chocolate ganache. Enjoy!
