This Dark Chocolate Ganache Layer Cake is so good, it makes you want to bake all day. Created by The Pioneer Woman, this cake layers rich chocolate ganache and fluffy white cake, making it the perfect dessert for any occasion.
Ingredients
¾ cup butter
2 unsweetened baking cocoa squares (1 ounce), chopped
2 ¼ cups all-purpose flour
2 cups of white sugar
¼ cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon salt
1 ¾ cups buttermilk
2 eggs, at room temperature
¾ cup whipping cream
1 ½ cups semisweet chocolate chips
Directions
Step 1: Preheat the oven to 350°F (175° C). Two 9-inch round cake pans should be greased.
Step 2: Butter and unsweetened chocolate should be placed in a double boiler set over simmering water. To avoid scorching, stir frequently and scrape down the sides with rubber spatulas. Continue stirring until melted for about five minutes.
Step 3: Use an electric mixer to combine flour, sugar, cocoa, and baking soda in a large bowl.
Step 4: In a separate bowl, combine buttermilk and eggs. Add the melted chocolate mixture. Mix buttermilk and eggs together in a bowl. Continue beating for about 1 minute. Increase speed to medium and continue beating until the mixture is light and fluffy. Divide the batter among the prepared pans.
Step 5: Bake the cake in the oven for 25-30 minutes or until it springs back when lightly touched, Let cool.
Step 6: In the meantime, heat cream in a saucepan on medium-high heat. Instantly remove the saucepan from heat. Stir in the chocolate chips until the cream thickens. Allow cooling for about 10 minutes.
Step 7: Spread one layer of the ganache frosting on top of the cooled cake. Place the second layer of cake on top. Cover the sides and top with the remaining ganache frosting.
Cook’s Note: You should not let the ganache cool before spreading it on the cake. It will get too runny and won’t sit well on the top of the cake.
