This Chipotle Barbacoa Beef is my husband’s favorite. This is another amazing slow cooker dish, packed with exciting flavors, and incredibly easy to make. We like to serve this mouthwatering beef over rice or in tortillas for a wonderful, filling meal excellent for the whole family!
Ingredients
1 ½ lbs brisket – or chuck roast
½ white or yellow onion – chopped
1 tbsp minced garlic – or 3 large garlic cloves
1 ½ tbsp tomato paste
2 tsp apple cider vinegar
6 chipotles – from a can of chipotles packed in adobo sauce
juice of 1 lime
1 tsp dried oregano
dash of ground cloves (optional)
1 tsp salt
1 tsp ground cumin
How to make Chipotle Barbacoa Beef
Step 1: Place the onion, garlic (pre-minced or simply add the whole peeled cloves), chipotles, tomato paste, vinegar, lime juice, salt, dried oregano, and cumin in a high-powered blender or food processor. Pulse until you have a smooth paste.
Step 2: In a slow cooker with the paste, toss in the quartered beef. Set to cook for 4 hours on high or 6 hours on low or until the beef is easily shredded using a fork.
Step 3: Take the meat out and shred it. After shredding the meat, place them back into the slow cooker and stir them into the sauce.
Step 4: Serve over rice or in tortillas. Enjoy!
Notes:
If feeding more people, double the recipe (this was tested in a 3.5-quart slow cooker). You may want to reduce some of the cooking juices depending on your slow cooker just before adding the shredded meat back.
You can finely chop the onions, garlic, and chipotle if you do not have a small food processor or bullet blender. Then, stir them into a paste.
This dish can be frozen. Before cooking in the slow cooker, thaw completely.
