Ingredients:
27 oz green chillies 1 can, whole chillies, preferably Hatch brand
1½ lb ground beef
1 onion finely chopped
1 lb grated cheese
12 corn tortillas
16 oz refried beans
TOPPING:
4 eggs beaten well
¼ c flour
½ c evaporated milk small can
2 tsp hot sauce
¼ tsp paprika
¼ tsp onion powder
Directions:
Step 1: Apply cooking spray in a 9×13-inch baking pan.
Step 2: Add the eggs, evaporated milk, hot sauce, flour, onion powder, and paprika in a large mixing bowl. Whisk until well mixed.
Step 3: Place a large skillet on the stove and turn the heat to medium.
Step 4: Add the ground beef and onions. Cook for about 5 to 7 minutes or until the beef is brown and the onions are translucent.
Step 5: Add the refried beans and stir until well combined with the beef.
Step 6: Slice into 1-inch strips the tortillas.
Step 7: Arrange ½ of the tortillas on the bottom of the prepared pan.
Step 8: Add ½ of the green chilis over the tortillas and spread it evenly.
Step 9: Add ½ of the cheese over the green chilis and spread it evenly as well, followed by green chilis.
Step 10: Spread the egg mixture on top of the green chilis.
Step 11: Add the beans and ground beef on top of the egg mixture.
Step 12: Sprinkle a generous amount of cheese over the meat and beans.
Step 13: Place the baking pan inside the preheated oven and bake for about 45 minutes or until done.
Step 14: Remove from the oven and allow it to cool for a few minutes.
Step 15: Serve and enjoy!
