Ingredients:
1 pound ground sirloin
½ cup chopped onion
¾ cup red bell pepper
1 teaspoon olive oil
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon garlic powder
1 teaspoon cumin
¼ teaspoon allspice
2 can(s) chopped green chile, 4 ounces each
1 ½ cups shredded sharp cheddar cheese, and a little more for the top of the casserole
1 dash(es) milk
½ cup sour cream
¼ cup all-purpose flour
4 Eggs, beaten
dash(es) Tabasco
toppings of sour cream, black sliced olives and chopped green onions
Directions:
Step 1: Place a medium skillet on the stove and turn the heat to medium.
Step 2: Add olive oil and allow it to become hot.
Step 3: Add in the onion and bell pepper, then season with a pinch of salt to taste. Cook until translucent.
Step 4: Add in the ground beef, garlic powder, cumin, allspice, salt, and pepper. Cook until the beef turns brown.
Step 5: Discard the excess grease by setting your skillet at an angle. Soak it using a paper towel.
Step 6: In the meantime, add 1 can of chiles in a 9×13-inch baking dish and spread it.
Step 7: Top the chiles with the sharp cheese.
Step 8: Spread the ground beef mixture over the cheese.
Step 9: Spread another can of chiles over the ground beef layer.
Step 10: In a bowl, mix the flour, salt, sour cream, milk, a dash of Tabasco, beaten eggs, and pepper.
Step 11: Pour the mixture on top of the entire dish.
Step 12: Place it inside the oven and bake for 40 to 50 minutes at 350 degrees F or until done.
Step 13: 10 minutes before baking ends, sprinkle a generous amount of cheese on top and allow it to melt completely.
Step 14: Remove from the oven and allow it to cool at room temperature.
Step 15: Slice into small squares and top each with sour cream black olives and freshly chopped green onions.
Step 16: Serve and enjoy!
