This Chili Con Carne is a total family comfort food! The combination of all the ingredients is perfectly balanced! 3 hours of cooking time is so worth it! This is a must-try recipe indeed!
Ingredients:
FOR THE CHILI SAUCE
4 ancho peppers
Salt to taste
4 guajillo peppers
FOR THE CHILI
2 tbsp olive oil
1 large onion, chopped
2 jalapeno peppers, chopped
3.5-4 lb. chuck roast, cut into ¾-1-inch cubes
10 cloves garlic, chopped
1 tbsp Mexican oregano
1 tbsp brown sugar
1 tsp cumin
2 tbsp paprika
1 tbsp black pepper
2-4 c beef stock
1 tsp ground coriander
Salt to taste
FOR SERVING: Crema or sour cream, fresh chopped herbs, spicy chili flakes or chopped chiles, shredded cheese – all your favorite chili fixings. I served mine with spicy chili flakes and fresh chopped cilantro.
OPTIONAL ADDITIONS: Worcestershire sauce, tomato sauce, chili or kidney beans, extra spicy chili powders
Directions:
Toast the dried ancho and guajillo peppers for a few minutes. Remove from the heat and allow them to completely cool.
Place them into a bowl with hot water for about 20 minutes.
Transfer them into a food processor together with some salt and 1 ½ cups of water. Pulse until well blended and smooth.
In a large mixing bowl, add the beef, coriander, salt, paprika, black pepper, brown sugar, cumin, and Mexican oregano. Toss everything until the beef slices are coated well.
Place a large pot on the stove and turn the heat to medium-high.
Add the beef slices together with the onion and jalapenos. Stir and cook for about 7 minutes.
Add the garlic and sauté for about a minute or until aromatic.
Add the reserved chili sauce and stir until well blended. Cook for another 5 minutes.
Add about 2 cups of beef broth and stir until well blended. Make sure to scrape the bottom of the pot to get the browned bits. Allow the mixture to boil.
Turn the heat down to low, then simmer the Chili Con Carne for 2 hours.
Serve right away with the fixings. Enjoy!
