Ingredients:
1 lb. chicken tenders
Salt and pepper
½ tsp garlic powder
2 tbsp olive oil
½ c butter (1 stick)
2 tbsp minced garlic
¼ tsp red pepper flakes
1 tsp salt divided
½ c dry white wine (such as Pinot Grigio)
1 ½ c white rice (uncooked)
3 c chicken broth
½ c Parmesan cheese (grated or shredded)
Directions:
Season the chicken tenders with garlic powder, salt, and pepper.
Place a large skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the chicken tenders and cook each side until brown. Remove from the skillet onto a clean plate.
In the same skillet, add butter and allow it to melt.
Add the garlic, salt, and pepper flakes. Saute until aromatic.
Turn the heat up to medium-high, then pour in the white wine. Stir and cook for 5 minutes. Make sure to scrape the bottom of the skillet to get the brown bits.
Reserve about 3 tbsp of the sauce.
Add the uncooked rice and the rest of the butter sauce. Stir until well mixed.
Add the chicken broth and stir until well mixed. Allow the mixture to boil, then turn the heat down to medium-low.
Cover and simmer for about 20 minutes or until the rice is soft. Make sure to stir from time to time.
Sprinkle a generous amount of Parmesan cheese on top.
Place the cooked chicken tender on top of the rice.
Remove from the and let it rest for 5 minutes, then drizzle the reserved sauce on top of the chicken.
Sprinkle freshly chopped parsley on top.
