All my friends told me that I make the best marinade for chicken. Well, you just have to try and taste this recipe yourself to know if that is true! What I love to do is to fry the chicken with no breading. So no extra starch, but it is still crispy. If you have tried the authentic Filipino chicken adobo, then this tastes somehow similar. Serve the chicken over rice and you have yourself a meal to remember! As perfect as this recipe already is, feel free to add more ingredients if you prefer. Ingredients:
3 tbsp soy sauce
1 ½ tsp lemon zest
1 tbsp fresh parsley leaves chopped,
2 tsp minced garlic
½ c olive oil
2 tbsp brown sugar
1 tbsp fresh thyme leaves chopped
1 tsp salt
½ tsp pepper
Directions:
In a large mixing bowl, add all the ingredients for the marinade. Stir until well mixed.
Add about 2 lbs. of chicken thighs and toss until well coated by the marinade.
Cover the bowl with plastic wrap, then place it inside the fridge to marinate for about an hour to overnight.
Remove the chicken thighs from the fridge and the bowl.
Cook according to your preference. Enjoy!
