I got this recipe from my friend, and I’ve been making it since! I have listed all the ingredients and directions so all you have to do is to follow them step by step and you are good to go! You are more than welcome to add more of your preferred ingredients. I like serving these bad boys with sour cream as a dipping sauce. Oh, man, you are so in for a treat! Ingredients:
3 c chicken cooked and shredded
6 ounces cream cheese softened
⅓ c sour cream
½ c salsa
1 ½ c Colby jack cheese
1 ½ c baby spinach chopped and stems removed
12 6-inch corn tortillas
vegetable or canola oil for frying
Directions:
Place a saucepan on the stove and turn the heat to medium.
Add ½ oil and allow it to become hot.
In a mixing bowl, add the chicken, sour cream, cream cheese, co-jack, spinach, salsa, salt, and pepper. Stir until well mixed.
Top each tortilla with 1 tbsp of the mixture and spread it evenly, then roll each.
Add the tortillas into the hot skillet in batches and cook each side until golden brown. Repeat the process with the rest of the tortillas.
Place them onto a clean plate lined with paper towels to drain any excess oil.
Serve and enjoy!
