Ingredients
¼ c. olive oil
6 thin sliced chicken breasts
1 container green onion cream cheese
½ c. chicken broth
1 small bag of fresh baby spinach
1 large package of sliced mushrooms
1 dash Weber, Herb and Garlic Seasoning
8 ounces shredded mozzarella cheese
1 dash pepper
HOW TO MAKE CHICKEN SPINACH AND MUSHROOM LOW-CARB OVEN DISH
Step 1: In a pan, place the chicken in a single layer, then place the mushroom and spinach on top and sprinkle with the seasonings.
Step 2: In a bowl, place the softened cream cheese. Add the olive oil and chicken broth. Mix well, then pour this over the chicken in the pan. Using foil, tent the pan. DO NOT seal.
Step 3: Place in the oven and bake for about 20 minutes at 375 degrees. Uncover and continue baking for another 20 to 25 minutes. Then, sprinkle with mozzarella cheese and resume baking for 10 minutes more or until the cheese begins to brown.
Step 4: Remove from the oven when done and allow the casserole to cool for about 10 minutes before serving. Enjoy!
