This recipe will always have a very special place in my heart. My grandma used to make this Chicken Salad all the time! I was always a keen observant of her greatness in the kitchen and life. This is just one of the great recipes she had. I am so grateful to her for sharing this with me because now, I get to share it with you as well. How awesome is that? Ingredients:
Dressing:
2 tbsp Dijon Mustard (1 oz. by scale weight)
½ c Sour Cream (4 oz. by scale weight)
2 tsp Sugar
1 c Mayonnaise (6 oz. by scale weight)
5 tsp Lemon Juice
½ tsp White Pepper
1 tbsp Dill Weed
Salad:
1 c finely chopped Celery
4 tbsp finely chopped Green Onions
2 c shelled Sunflower Seeds
3 c chopped Poached Chicken
Directions:
Add mayonnaise, sour cream, white pepper, Dijon mustard, sugar, and lemon juice into a large bowl. Stir everything until well blended.
Let the poached chicken cool for a few minutes at room temperature, then slice them into small pieces.
Put the chicken into the bowl.
Add celery, green onions, and sunflower seeds. Stir everything until well blended.
Put the bowl inside the fridge and allow the salad to chill for one to two hours.
Serve chilled and enjoy!
