I will never get tired of sharing this recipe with my friends because it is just too perfect! This Chicken Ramen is a must-try, I’m telling you! Feel free to tweak the recipe to your liking. Enjoy!
Ingredients:
3 pkg (3 oz EACH) ramen noodles, seasoning packets discarded
2 tbsp vegetable oil deleted
1 clove garlic
1 and ½ tsp ginger paste (or ~1-inch fresh ginger)
½ of 1 large red bell pepper (~⅔ c), chopped into small pieces
¾ c chopped broccoli chopped into small pieces
2 oz chopped mushrooms (~¾ cup) chopped into small pieces
2 tbsp reduced-sodium soy sauce
2 tbsp Worcestershire sauce
1 tbsp ketchup
2-3 tsp Sriracha sauce
1 tbsp packed dark or light brown sugar (I like dark)
1 large chicken breast (½ pound), or thigh, chopped into small bite-size pieces
Fine sea salt and freshly cracked pepper
Garnish with a sprinkle of toasted sesame seeds, 3-4 green onions, 1-2 tbsp chopped cilantro, and a few drizzles of sesame oil
Directions:
Refer to the directions provided on the package of the ramen noodles on how to cook them.
Drain and drizzle with 1 tbsp of vegetable oil Toss until well coated.
Place a large skillet on the stove and turn the heat to medium.
Add 1 tbsp of oil and allow it to become hot.
Add ginger and garlic. Sauté until aromatic.
Add bell pepper, mushrooms, and broccoli. Sauté until soft.
In a small mixing bowl, add Worcestershire sauce, soy sauce, sriracha, brown sugar, and ketchup. Stir until well combined.
Slice the chicken into small cuts, then season all sides with salt and pepper.
Add the chicken slices into the skillet and cook each side for 3 minutes or until done.
Add the sauce and stir until well mixed.
Add the cooked noodles and toss until well coated.
Drizzle sesame oil on top.
Garnish with green onions, cilantro, and sesame seeds.
Serve and enjoy!
