Ingredients:
15 oz can tomatoes use crushed tomatoes or fire-roasted tomatoes, or you can use fresh, chopped?
1 red bell pepper, chopped
½ c sour cream, room temperature – or use crema, yoghurt, quark, or heavy cream
1 large onion, chopped
3 tbsp sweet paprika
1 tbsp butter or use vegetable oil
3 cloves garlic, chopped
2 lbs. bone-in chicken pieces I used thighs for this recipe, skin on
Salt and black pepper to taste
1 tsp hot paprika or use cayenne powder
1 jalapeno pepper, chopped (optional, for more spice factor)
FOR SERVING:
Spicy chili flakes, fresh chopped parsley
Directions:
Place a large pan on the stove and turn the heat to medium. Add oil and allow it to become hot.
Use paper towels to pat dry the chicken thighs, then sprinkle salt and pepper over. Rub each until well coated.
Put the chicken thighs into the hot skillet, then sear each side for about 5 minutes or until they turn brown.
Remove the chicken thighs from the skillet and transfer them onto a clean plate.
Leave about 1 tbsp of oil into the skillet and remove the rest.
Add the peppers and onion into the skillet, then sauté for a few minutes until soft.
Add garlic, salt, hot paprika, and pepper. Sauté for about a minute or until aromatic. Add the tomato and stir until well incorporated.
Put the chicken thighs back into the skillet, then cover it with a lid. Simmer everything for about 25 minutes. Remove it from the heat.
Remove the chicken thighs from the skillet.
Pour sour cream into the skillet and stir until well blended. Taste and add more seasonings if needed.
Put the chicken thighs back into the skillet and spoon the delicious sauce over to coat them well.
Serve right away. Enjoy!
