Ingredients:
1½ tablespoons butter
½ c onion, chopped ~ small dice
2 skinless, boneless chicken breast halves, cut crosswise into ½-inch-wide strips
1 large plum tomato, seeded, chopped ~ small dice
1 teaspoon smoked paprika
1 c chicken stock or broth, preferably homemade ~ if using canned, use low sodium
¼ c sour cream
Kosher salt and freshly cracked pepper
3 teaspoons sweet paprika
Directions:
In a mixing bowl, add the chicken pieces, salt, 1 tsp of sweet paprika, and pepper. Toss well until the chicken pieces are well coated.
Place a large nonstick skillet on the stove and turn the heat to medium-high.
Add butter and allow it to melt.
Add prepared chicken pieces into the hot skillet, then cook each side for about 5 minutes or until golden brown.
Move the chicken pieces onto a clean plate.
In the same empty skillet, add the rest of the butter and allow it to melt.
Add the onion, then sauté for about 3 minutes or until translucent.
Sprinkle 2 tsp of sweet paprika and 1 tsp of smoked paprika. Stir until well incorporated.
Add the tomato slices, then stir and cook for a minute.
Pour in the broth slowly and stir continuously until well blended. Let the mixture boil. Simmer everything for 6 minutes or until the texture of the sauce becomes thick.
Bring the chicken pieces into the skillet together with any juice from the plate, then toss everything until well coated with the sauce.
Turn the heat down to low, then simmer the chicken mixture for a few more minutes.
Remove from the heat, then immediately add the sour cream and stir until well blended. Taste and add more seasonings if needed.
Serve right away over buttered noodles. Enjoy!
