Ingredients:
2-3 boneless chicken breasts, thinly sliced
1 tablespoon butter
½ c white onion, chopped
3 c sliced mushrooms, (8 oz)
½ c heavy cream
1 teaspoon corn starch
1 tablespoon water
½ c white wine
½ c chicken stock
2 tablespoons olive oil, divided
1 tablespoon chopped fresh or frozen parsley

Directions:
Place a large skillet on the stove and turn the heat to medium.
Add 1 tablespoon of oil and 1 tablespoon of butter, then allow them to become hot.
Sprinkle salt and pepper over the chicken pieces.
Add the chicken pieces into the hot skillet and cook each side for about 2 minutes.
Remove them from the skillet onto a clean plate.
Add 1 tablespoon of oil into the same pan and allow it to become hot.
Add the onion and sauté for a few minutes until it turns a bit brown and translucent.
Add the mushrooms and sauté until soft.
Add the wine and scrape the bottom of the skillet to get the brown bits. Simmer for a few minutes until it reduces its volume.
Add the cream and chicken stock, then stir until well blended.
Add the cornstarch and water mixture, then stir until well mixed. Simmer for a few minutes over high heat until the texture of the sauce becomes thick.
Put the chicken pieces back to the skillet, then toss until well coated with the delicious sauce. Simmer for another 30 seconds.
Add parsley and stir until well mixed. Add more seasonings if needed.
Serve over pasta. Enjoy!
