Ingredients:
FOR THE MANICOTTI FILLING
3 cups shredded cooked chicken
¾ cup freshly grated Parmesan, divided
2 ½ cups ricotta cheese
1 ½ cups shredded mozzarella, divided
1 (8 ounces) package manicotti
1 (10 ounces) package frozen spinach, defrosted and drained
Kosher salt
Pinch red pepper flakes
1 teaspoon Italian seasoning
Freshly ground black pepper
FOR THE ALFREDO SAUCE
2 cloves garlic, minced
2 ½ cups milk
½ cup freshly grated Parmesan
Juice of ½ a lemon
¼ cup all-purpose flour
Kosher salt
4 tablespoons butter
Freshly ground black pepper
2 tablespoons freshly chopped parsley, plus more for garnish
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
Add the manicotti and cook until firm to bite. Drain and rinse with cold water to stop the cooking process.
For the Ricotta Filling:
Add spinach, chicken, ½ cup Parmesan cheese, ricotta, Italian seasoning, 1 cup mozzarella cheese, red pepper flakes, salt, and pepper into a mixing bowl. Stir until well combined.
For the Alfredo Sauce:
Place a medium skillet on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the garlic and sauté until aromatic.
Add the flour, then whisk and cook for about 1 minute.
Add the milk and whisk until well blended. Allow the mixture to simmer.
Add the Parmesan cheese and stir until well mixed. Simmer for another 2 minutes or until the texture of the sauce become thick.
Add the parsley and lemon juice, then stir until well mixed. Sprinkle salt and pepper to taste.
Add a couple of tablespoons of Alfredo sauce into a 9×13-inch baking dish and spread it evenly.
Add the ricotta mixture over the Alfredo sauce layer.
Spread the rest of the Alfredo sauce over the ricotta mixture, then top everything with ½ cup of both mozzarella and Parmesan cheese.
Cover the baking dish with aluminium foil, then place it inside the preheated oven and bake for about 20 minutes or until the cheese is melted completely.
Remove from the oven and sprinkle freshly chopped parsley on top.
