Chicken Lasagna, anyone? This just might be your lucky day because this recipe I am sharing with you is my all-time favourite! I have listed all the things you will be needing. Just follow them for they will guide you to perfection! Have a great day, friends. Enjoy!
Ingredients:
12 lasagna noodles cooked and cooled
4 c cooked chicken
3 c vegetables cooked and cooled
10 oz frozen chopped spinach defrosted and squeezed dry
2 c cottage cheese or ricotta cheese
2 Eggs
2 tbsp parsley
4 c mozzarella divided
⅔ c shredded parmesan cheese divided
Sauce
⅓ c butter
1 onion diced
2 cloves garlic minced
¼ c flour
2 c milk
2 c chicken broth
4 oz cream cheese
1 tsp dried basil
½ tsp oregano
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a saucepan on the stove and turn the heat to medium-low.
Add butter and allow it to melt.
Add the garlic and onion, then sauté until aromatic and soft.
Add flour, then stir and cook for about a minute.
Turn the heat down to low, then add the broth and milk. Stir until well mixed and thick.
Add the cream cheese and stir until melted completely.
Remove the pan from the heat, then add 1 cup of mozzarella cheese, ⅓ cup Parmesan, oregano, and dried basil. Stir until well mixed.
In a mixing bowl, add eggs, cottage cheese, spinach, and parsley. Stir until well mixed.
Lay 4 noodles to the bottom of a 9×13-inch baking pan.
Top the noodles with the sauce, cooked veggies, and ½ of the chicken.
Sprinkle ¼ cup of Parmesan cheese, ½ mozzarella cheese, and ⅓ sauce.
Repeat the process until everything is arranged in layers ending with the sauce.
Cover the baking pan with foil.
Place it inside the preheated oven and bake for about 40 minutes.
Remove the cover and sprinkle more cheese on top.
Bake for another 20 minutes or until the cheese is melted completely.
