Ingredients:
1 tbsp (13g) olive oil
2 c (137g) sliced mushrooms (We like cremini)
1 small yellow onion, finely diced
1 and ½ tsp minced garlic
4 tbsp (56g) unsalted butter
¼ c (31g) white, all-purpose flour
2 tsp chicken bouillon powder
1 tsp Italian seasoning
Fine sea salt and pepper
2 c (480g) whole milk Note 1
1 and ¼ c (285g) Swanson’s chicken stock
1 pkg (16 ounces.; 453g) gnocchi
2 c (285g) prepared rotisserie chicken, chopped
2 c (52g) baby spinach, coarsely chopped
½ c (32g) finely grated parmesan cheese (plus more for topping individual bowls if desire)
Optional: fresh parsley
Directions:
Prepare the oven and preheat to 220 degrees C or 425 degrees F.
Place an oven-safe pan on the stove and turn the heat to medium-high.
Add olive oil and allow it to become hot.
Add the onions and mushrooms. Sauté for 5 minutes or until translucent and soft.
Add the garlic and sauté until aromatic.
Remove them from the pan onto a clean plate.
In the same pan, add the butter and allow it to melt.
Add flour. Whisk and cook until brown.
Add the Italian seasoning, bouillon, salt, and pepper. Stir until well blended.
Add the milk and broth gradually, then whisk every addition. Cook for 5 minutes or until the texture becomes thick.
Add the gnocchi, mushroom mixture, spinach, and chicken pieces. Stir until well combined with the sauce.
Sprinkle a generous amount of Parmesan cheese on top.
Place it inside the preheated oven and bake for about 25 minutes or until done.
Broil for another minute or until the top becomes crisp.
Remove from the oven and allow it to cool for a few minutes at room temperature.
Serve and enjoy!
Note:
Sprinkle more Parmesan cheese over each serving.
