Ingredients:
1 ½ pound boneless, skinless chicken – pounded ¼ inch thick
⅔ cup flour
½ teaspoon cumin
½ teaspoon pepper
1 teaspoon salt – divided
1 teaspoon pepper – divided
1 teaspoon garlic powder
½ teaspoon cayenne pepper
2 tablespoons grated parmesan cheese
1 – 1 ½ cups saltine cracker crumbs
½ cup buttermilk
1 Egg
vegetable oil for frying chicken – as much as it takes to keep chicken from burning – I keep adding as needed
1 medium onion, sliced ( optional )
GRAVY
1 cup buttermilk
½ cup chicken broth
2 ½ tablespoons flour
salt and pepper to taste
Directions:
Step 1: Add ⅔ cups of flour, garlic powder, cayenne, cheese, salt, and pepper onto a pie plate. Whisk until well mixed.
Step 2: Place the crushed cracker crumbs on a plate.
Step 3: In a mixing bowl, add the buttermilk and egg. Whisk until well mixed.
Step 4: Use a meat mallet to pound the chicken, then season all sides with salt and pepper.
Step 5: Place a skillet on the stove and turn the heat to medium-high.
Step 6: Add oil and allow it to become hot.
Step 7: Coat each chicken with flour, egg wash, then into the crumbs. Shake off any excess.
Step 8: Add the coated chicken into the hot oil.
Step 9: Cook the chicken for 3 minutes on each side or until golden brown.
Step 10: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 11: Place the chicken inside the oven to keep them warm.
To Make the Gravy:
Step 1: Add the onions into the same skillet, then sauté until translucent.
Step 2: Remove the onions from the skillet.
Step 3: Add the buttermilk, flour, chicken broth, salt, and pepper. Stir and allow the mixture to boil.
Step 4: Top the chicken with the fried onions and serve with delicious gravy. Enjoy!
