Everything about this Chicken Florentine Pasta is perfect! From the sauce to the pasta and chicken, you will surely enjoy every bite! A must-try recipe indeed!
Ingredients:
Florentine Sauce:
4 Sun-dried Tomatoes (oil-packed, small diced. Plus 1 tablespoon of oil)
¾ c Four Cheese Blend (Or use shredded Asiago-Fontina Cheese half & half.)
120g of Spinach (about 4 cups, of fresh baby spinach)
1 tablespoon Garlic (fresh 4-5 cloves, minced)
Parsley (fresh chopped)
½ c Chicken Stock
½ teaspoon Oregano
¼ c White Onion (small diced)
1 c Cream, half and half
Chicken
2 tablespoons Olive Oil
Salt and Black Pepper
½-pound Pasta (Farfalle Bowtie or Penne Pasta)
1 pound Chicken (boneless, breast or thigh)
Directions:
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and a bit of salt, then cook for a few minutes until al dente. Set aside 1 cup of pasta water for later use.
Drain and rinse with cold water to stop the cooking process. Set aside.
Place a large, deep pan on the stove and turn the heat to medium.
Add 2 tsp oil and allow it to become hot.
Add the spinach and salt. Sauté for a few minutes until wilted. Transfer the sauteed spinach onto a clean plate lined with paper towels to drain excess oil.
In the same pan, add 1 tbsp of sun-dried tomato oil and 1 tbsp of oil, then allow them to become hot.
Sprinkle salt and pepper over the chicken, then add them to the hot skillet. Sear each side for a few minutes until nicely browned. Transfer onto a clean plate.
Add the rest of the oil into the same pan.
Add the onion slices, then sauté for 2 minutes or until translucent.
Add the chopped garlic, dried oregano, and sun-dried tomatoes, then sauté for a minute or until aromatic.
Add chicken stock and half & half, then scrape the bottom of the pan to get the browned bits. Stir until well blended.
Allow the mixture to boil, then reduce the heat and simmer for about 3 minutes or until the texture of the sauce becomes thick.
Add the spinach and shredded cheese, then stir until well mixed.
Add the chicken and pasta, then toss everything until well combined.
Sprinkle freshly chopped parsley on top to garnish.
