I am so in love with this Chicken Florentine! This was probably my fifth time cooking it this week alone! Oh, man, you have got to give this recipe a try! Serve it as is or with mashed potatoes, and you have yourself a meal to remember. Enjoy!
Ingredients:
2 tbsp Butter
2 tbsp olive oil
4 boneless skinless chicken breasts
Chicken Dredge:
1 tsp garlic powder
¼ c Parmesan cheese, finely shredded
½ c flour
2 tsp Italian Seasoning
1 tsp salt
½ tsp pepper
Florentine Sauce:
⅓ c softened cream cheese
1 c half and half
4 cloves garlic, minced
3 c fresh spinach
1 ½ c white wine, or chicken broth
Fresh parsley, to garnish
½ fresh lemon or 1.5 tbsp lemon juice, optional
Directions:
Wrap each chicken breast with a saran, then use a meat mallet to gently pound each to even thickness. Use paper towels to pat them dry.
In a mixing bowl, add all the ingredients for the chicken dredge. Whisk until well blended.
Add the chicken pieces into the bowl with the flour mixture, then toss until well coated. Shake off any excess.
Place a skillet on the stove and turn the heat to medium-high.
Add olive oil and butter, then allow them to become hot.
Add the chicken into the skillet and cook each side for about 5 minutes or until they turn golden brown. Transfer onto a clean plate.
Reduce the heat to medium, then add garlic into the empty skillet. Sauté until aromatic.
Add the white wine, then scrape the bottom of the skillet to get the browned bits.
Turn the heat up to medium-high and simmer for 5 minutes or until the volume of the sauce reduces.
Place the half & half inside the microwave and heat for a few seconds.
Add the half & half into the skillet and stir until well mixed.
Turn the heat down to low, then add the softened cream cheese. Stir until well blended.
Add the spinach and cook until wilted completely.
Add the lemon juice and stir until well blended.
Put the chicken back into the skillet, then toss until well coated by the delicious sauce.
Remove from the heat and sprinkle freshly chopped parsley on top to garnish.
Serve right away and enjoy!
