This amazing cheesy casserole is super delicious! All you need is one skillet, these simple ingredients, and 45 minutes of your time! A must-try recipe that you will surely enjoy preparing!
Ingredients:
1 c sour cream
4 oz. of cream cheese, softened
2 c cheddar cheese, grated
1 recipe Taco Seasoning Mix or our Fajita Seasoning
1 small onion, sliced
4 bell peppers, sliced (vary the colors to make it pretty!)
6 (4 to 6 oz each) boneless, skinless chicken thighs, or breasts, cut into 1-inch to 2-inches pieces.
Optional: garnish with avocado or guacamole, sour cream, and salsa. For spicy lovers add heat with hot sauce
1 tbsp olive oil
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place an oven-safe skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the chicken into the hot skillet, then sauté for a few minutes or until golden brown.
Transfer the chicken onto a clean plate.
In the same empty skillet, add peppers and onions. Sauté the veggies for a few minutes or until soft and translucent.
Put the chicken back into the skillet together with cream cheese, taco seasoning, and sour cream. Stir everything until well combined. Remove from the heat.
Sprinkle the cheese over the chicken mixture. Make sure to cover the top.
Place the skillet inside the preheated oven and bake the Chicken Fajita Casserole for about 20 minutes or until the cheese turns golden brown and melts completely.
Remove from the oven and allow it to rest for a few minutes at room temperature.
Serve warm and enjoy!
Notes:
You can use pre-cooked chicken for this recipe if you like.
Top each serving with salsa, sour cream, guacamole, or avocado if you prefer.
You can use a casserole dish for this instead of an oven-safe skillet.
