This Chicken Cordon Bleu Casserole is keto-friendly! It is low carb so you can eat a lot of it and feel no guilt at all! Enjoy the delicious layer of flavors in each bite of this casserole! You will crave it pretty much all the time!
Ingredients:
5 ounces Swiss cheese
1 tbsp Dijon mustard
6 ounces cream cheese, softened
1-ounce lemon juice
6 ounces ham, cut into bite-size pieces
6 c shredded cooked chicken (from about 2 pounds chicken)
½ tsp salt
4 ounces butter, melted
1 tbsp white wine (optional)
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Scatter the shredded chicken on the bottom of a 9×13-inch baking dish.
Arrange the ham slices over the shredded chicken layer.
Add white wine, melted butter, lemon juice, salt, mustard, and softened cream cheese into the bowl of an electric mixer. Beat until well blended.
Pour the mixture on top of the ham layer into the baking dish and spread it evenly.
Arrange the Swiss cheese slices over the baking dish.
Place it in the preheated oven and bake for about 30 to 40 minutes or until the top turns brown. You can broil for about 2 minutes if you prefer.
Remove from the oven and allow it to rest for a few minutes at room temperature.
Serve and enjoy!
Notes:
I highly suggest adding wine to this recipe. It gives such a delicious flavor!
Feel free to use chicken tenderloins for this recipe instead of shredded chicken.
Place any leftovers in an airtight container, then place them in the fridge.
Serve this with roasted asparagus, steamed veggies, or a green salad.
