Ingredients:
3 pounds bone-in, skin-on, chicken thighs (about 8)
1 tbsp olive oil
salt
pepper
1 large onion finely chopped
8 ounces fresh mushrooms sliced
3 cloves garlic minced
½ tsp crushed red pepper flakes
2 tbsp all-purpose flour
1 c dry white wine
14.5-ounce canned diced tomatoes do not drain
2 tbsp tomato paste
3 bay leaves
1 small Parmesan rind
1 tbsp fresh thyme leaves or 1 tsp dried thyme
1 tsp dried oregano
1 large red bell pepper ribs and seeds removed, chopped
Directions:
Place a large skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Coat the chicken with salt and pepper.
Add ½ of the chicken slices into the hot skillet and cook each side for about 5 minutes. Remove the chicken from the skillet onto a clean plate lined with paper towels to drain any excess oil. Repeat the process with the rest of the chicken. Remove the skin from the chicken.
Leave about 1 tbsp of the grease in the skillet and remove the rest.
Add the onions, mushrooms, and a bit of salt. Saute until soft.
Add the garlic and red pepper flakes, then saute until aromatic.
Add the flour, then whisk and cook for about a minute.
Add the tomatoes, wine, bay leaves, tomato paste, oregano, bell pepper, thyme, and Parmesan rind. Stir until well mixed.
Put the chicken back to the skillet and toss until well coated with the sauce. Allow the mixture to boil.
Turn the heat down to low, then simmer for 45 minutes or until the chicken pieces are soft.
Discard the Parmesan rind and bay leaves.
Add more seasonings into the mixture if necessary.
Remove from the heat and sprinkle freshly chopped parsley on top.
Serve and enjoy!
