Ingredients:
1 (8 oz) package lasagna noodles
3 c heavy cream
2 (10.75 oz) cans condensed cream of mushroom soup
1 c grated Parmesan cheese
¼ c butter
1 tbsp olive oil
½ large onion, diced
4 cloves garlic, sliced
5 mushrooms, diced
1 roasted chicken, shredded
salt and ground black pepper to taste
1 c ricotta cheese
1 bunch fresh spinach, rinsed
3 c shredded mozzarella cheese
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Place a large pot with salted water on the stove and turn the heat to high, and then allow it to boil.
Step 3: Add the lasagna noodles and cook until al dente for about 10 minutes.
Step 4: Drain the noodles and rinse with cold water to stop the cooking process.
Step 5: Place a saucepan on the stove and turn the heat to low.
Step 6: Add the cream of mushroom soup, heavy cream, butter, and Parmesan cheese. Stir until well mixed.
Step 7: Simmer the mixture for a few minutes. Make sure to stir from time to time.
Step 8: Place a skillet on the stove and turn the heat to medium.
Step 9: Add olive oil and allow it to become hot.
Step 10: Add the onion and sauté until translucent.
Step 11: Add the garlic and mushrooms. Sauté for a few minutes until aromatic, then season with salt and pepper to taste.
Step 12: Spread enough cream sauce on the bottom of a 9×13-inch baking dish.
Step 13: Place ⅓ of the cooked lasagna noodles over the sauce followed by ½ cup of ricotta, ½ of the spinach, ½ of the chicken mixture, and 1 cup of mozzarella cheese.
Step 14: Spread about ⅓ of the cream sauce over the layers.
Step 15: Repeat steps 13 and 14 until everything is arranged in layers.
Step 16: Place the baking dish inside the preheated oven and bake for 1 hour or until the top turns brown and it starts to bubble.
Step 17: Remove from the oven and sprinkle the rest of the mozzarella cheese on top.
Step 18: Put it back inside the oven and bake until the cheese has melted completely.
Step 19: Remove from the oven and allow it to cool for a few minutes.
Step 20: Serve and enjoy!
