This chicken Alfredo is an amazing dish. The homemade Alfredo sauce is crazy delicious, creamy, and rich. The Parmesan baked chicken and fettuccine pasta are tossed and clothed in the delightful sauce!
Ingredients
16 ounces fettuccine
Chicken:
½ c. grated Parmesan cheese
1.5 pounds of chicken breast or thighs
salt
2.5 teaspoons oregano
fresh cracked black pepper
Alfredo Sauce:
2 garlic cloves
2 tablespoons unsalted butter
2 c. heavy whipping cream
½ c. fresh grated Parmesan cheese
¼ c. sour cream
½ c. dry Parmesan cheese
salt
fresh cracked black pepper
1 tablespoon all-purpose flour
How to make Chicken Alfredo
Step 1: Following the package directions, cook the fettuccine until al dente. Drain when done and set aside.
Baked Chicken:
Step 2: Prepare the oven. Preheat it to 450 degrees. Ready a rimmed baking sheet. Grease and set aside.
Step 3: After trimming the excess fat off the chicken, season both sides of the chicken with salt, pepper, and oregano. On all sides, generously sprinkle with fresh grated Parmesan cheese. Then, lay the chicken on the prepared baking sheet.
Step 4: Place in the preheated oven and bake for about 15 to 20 minutes. Remove from the oven when done and transfer the chicken to a cutting board to rest for approximately 5 minutes before slicing against the grain.
Alfredo Sauce:
Step 5: In the meantime, measure all the sauce ingredients.
Step 6: Melt the butter in a medium, heavy-bottom sauce pot over medium heat. Then, add the pressed garlic and cook until aromatic. Stir in the flour and gradually pour in the heavy whipping cream, stirring regularly.
Step 7: Stir the mixture gently and allow it to heat through, but do not let it boil. Stir in the sour cream, Parmesan cheese, salt, and pepper once the heavy cream is hot. Then, adjust the heat to medium-low and gently stir until the cheese has melted and incorporated. Continue to cook for another 5 minutes over medium-low heat, stirring occasionally.
Step 8: Toss in the cooked pasta and sliced chicken. Before serving, garnish with some fresh parsley and grated Parmesan cheese. Enjoy!
