Ingredients:
2 skinless, boneless chicken breasts
Kosher salt and ground pepper
1 tsp paprika
Peanut oil, for frying
1 Egg
½ c milk
¾ c all-purpose flour
¼ c whole-wheat flour
1 tbsp dry milk
1 tbsp powdered sugar
¼ tsp baking soda
¼ tsp dry mustard
1 sour pickle, cut into eight slices
4 soft hamburger buns, split
3 tbsp unsalted butter, softened
Directions:
In a mixing bowl, add the milk, egg, 2 tbsp of water, and ½ tsp of paprika. Whisk until well combined.
In a separate mixing bowl, add the flour, baking soda, powdered sugar, dry mustard, dry milk, ½ tsp of paprika, salt, and pepper. Whisk until well combined.
Prepare and slice the pickles.
Place a cast-iron skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Dredge each chicken into the egg mixture, then into the flour mixture. Shake off any excess.
Add the coated chicken breasts into the hot oil and cook for 4 minutes or until they turn golden brown.
Remove from the oil onto a clean plate lined with paper towels to drain any excess oil.
Place a large skillet on the stove and turn the heat to medium.
Spread butter over each bun.
Add the buns into the hot skillet and toast.
To Assemble:
Spread more butter over the toasted buns.
Add 2 pickles over each bun.
Top each with a pie of the chicken.
Top each chicken with the remaining buns.
Serve immediately and enjoy!
