Ingredients:
1 ¼ c all-purpose flour
½ tsp baking soda
¼ tsp salt
½ c butter
½ c packed brown sugar
½ c white sugar
1 Egg
½ tsp vanilla extract
1 ⅓ c flaked coconut
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: In a medium mixing bowl, add the flour, baking soda, and salt. Whisk until well combined.
Step 3: In a medium mixing bowl, add the brown sugar, butter, and white sugar. Beat until well combined and creamy.
Step 4: Add in egg gradually and beat every addition.
Step 5: Add in the vanilla and stir until well blended.
Step 6: Transfer the flour mixture into the butter mixture and stir until well combined.
Step 7: Add in the coconut and stir until well mixed.
Step 8: Spoon the dough on a cookie sheet. Make sure to leave a 3-inches space between each cookie.
Step 9: Place the cookie sheet inside the preheated oven and bake for about 8 to 10 minutes or until golden brown.
Step 10: Remove from the oven and let the cookies sit on a wire rack to cool completely.
Step 11: Serve and enjoy!
