Ingredients:
8-9 whole Potatoes, Medium-Sized Cut under ¼″ Thick
4 tbsp Butter
4 tbsp Extra Virgin Olive Oil
1 whole Onion, Medium-Sized Cut In Half and Sliced Thin
⅔ c All-Purpose Flour
3 c Chicken Stock
2 c Milk
2 ½ c Cheddar Cheese, Grated
¼ c Chives, Chopped
Salt and pepper to taste
6 whole Pork Chops
1 c All-Purpose Flour
1 tsp salt
1 tsp Pepper
1 tsp Granulated Garlic
2 tbsp Butter, Softened
3 tbsp Extra Virgin Olive Oil
Additional Chives for Garnishing (Optional)
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Add the potato slices into a mixing bowl, then add enough cold water to submerge them. This process will discard unwanted starch off the potatoes.
Place a saucepan on the stove and turn the heat to medium.
Add olive oil and 4 tbsp of butter, then allow them to become hot and melt.
Add the onion and sauté until it caramelized.
Add ⅔ cup of flour and whisk until well mixed. Cook for a few minutes until brown.
Gradually add the chicken stock and milk, stir every addition.
Allow the mixture to simmer for a few minutes until the texture becomes thick.
Add the chives and cheese, then stir until well mixed. Add more seasonings if needed.
Drain the potatoes and use paper towels to pat them dry.
Add half of the potatoes into a 10×15-inch casserole dish and spread them evenly.
Spread half of the cheese sauce over the potatoes.
Repeat the process until everything is arranged in layers.
Place it inside the preheated oven and bake for about 20 minutes or until done.
Meanwhile, add flour, granulated garlic, salt, and pepper into a mixing bowl. Whisk until well mixed.
Add the pork chops and coat them well with the mixture.
Place a skillet on the stove and turn the heat to medium.
Add 2 tbsp of butter and 3 tbsp of olive oil, then allow them to melt and become hot.
Add the pork chops and cook each side until brown.
Remove the pork chops from the skillet and place them over the potatoes.
Place it inside the oven and cook for another 40 minutes or until done.
Remove from the oven and allow the dish to cool for at least 5 minutes at room temperature.
