Ingredients:
½ tbsp olive oil
1 lb ground beef (I use ‘extra lean’)
1 tsp chilli powder
1 tsp chipotle chilli powder
½ tsp oregano
½ tsp cumin
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
½ tsp black pepper
¼ tsp cayenne pepper powder (or to taste, optional)
1 tbsp tomato paste
2 tbsp unsalted beef stock/broth
12 oz shredded cheese blend (about 3 c (or combination of cheddar, Monterey jack and pizza mozzarella)
6 flour tortillas (mine were about 7 to 8 inches in diameter)
Cooking spray or oil (to grease pan)
Directions:
Step 1: Prepare the oven and preheat to 400 degrees F or 200 degrees C.
Step 2: Place a non-stick pan on the stove and turn the heat to medium.
Step 3: Add in olive oil and allow it to become hot.
Step 4: Add in the ground beef, chipotle powder, chilli powder, cumin, oregano, onion powder, garlic powder, cayenne pepper, salt, and pepper. Stir and cook for 8 to 10 minutes or until the beef is brown and crumbly.
Step 5: Add in the broth/stock and tomato paste. Stir and cook for another 2 minutes.
Step 6: Remove the beef and place it in a mixing bowl. Discard any excess grease.
Step 7: Add cheese in the middle of each tortilla.
Step 8: Top each tortilla with the beef.
Step 9: Sprinkle more cheese over the ground beef, and then fold each tortilla to form moon shapes.
Step 10: Apply cooking spray in a cooking pan and cook the quesadillas for 2 minutes on each side until golden brown. Make sure to cook the quesadillas in batches.
Step 11: Slice each quesadilla into two.
Step 12: Serve with sour cream, salsa, or guacamole!
