Ingredients:
1 can (10 ½ oz) Campbell’s® Condensed Cream of Chicken Soup or 98% Fat-Free Cream of Chicken Soup or Healthy Request® Cream of Chicken Soup
1 ⅓ c water
¾ c uncooked long-grain white rice
½ tsp onion powder
2 c frozen mixed vegetables (carrots, green beans, corn, peas)
1 ¼ lb boneless, skinless chicken breast (4 small or 2 large cuts in half crosswise)
½ c shredded Cheddar cheese (about 2 oz)
Directions:
Step 1: Prepare the oven and preheat 190 degrees C or 375 degrees F.
Step 2: In a 11x8x2-inch baking dish, add the rice, water, soup, veggies, and onion powder. Stir until well combined.
Step 3: Sprinkle salt and pepper to taste.
Step 4: Place the chicken over the rice mixture.
Step 5: Cover the baking dish with a lid or foil.
Step 6: Place the baking dish inside the preheated oven and bake for about 50 minutes or until done.
Step 7: Remove the casserole from the oven and put the cheese on top.
Step 8: Allow the casserole sit at room temperature for about 10 minutes.
Step 9: Give it a nice stir.
