Ingredients:
1 tbsp olive or avocado oil
½ tsp garlic powder
½ tsp onion powder
½ tsp ground cumin
½ tsp paprika
¼ tsp chili powder
½ tsp sea salt
5 c cauliflower florets cut into ½-inch slices
⅓ c refried beans
¾ c shredded Mexican cheddar cheese
1 jalapeno sliced
½ c chopped grape/cherry tomatoes
¼ c diced red onion
¼ c chopped fresh cilantro
1 avocado sliced or chopped (optional)
Directions:
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Apply cooking spray on a baking sheet.
Slice into about ½-inch cuts the cauliflower.
Add oil, garlic powder, cumin, paprika, onion powder, salt, and chili powder into a large mixing bowl. Stir until well combined.
Add the cauliflower slices and toss until well coated with the sauce.
Arrange the cauliflower slices onto a baking sheet. Make sure to leave a space between each slice.
Place them inside the preheated oven and bake for about 20 minutes or until done.
Remove from the oven and place the refried beans over the cauliflower slices.
Sprinkle a generous amount of cheese on top.
Arrange the jalapeno slices over the cheese.
Put it back inside the oven and bake for another 7 minutes or until the cheese has melted completely.
Remove from the oven and garnish with red onion, chopped tomatoes, and cilantro.
Serve hot and enjoy!
