This Cheesy Broccoli Cornbread just made my day! I’m telling you, it is a must-try! With this very minimal set of ingredients, you will surely have the best bread ever! Ingredients:
2 (8.5 oz.) packages cornbread mix
¾ c butter, melted
1 (12 oz.) package frozen chopped broccoli, thawed (I like to chop it up finely)
1 c cottage cheese
1 medium onion, finely chopped
1 ½ c shredded sharp cheddar
4 large Eggs
A pinch of cayenne pepper
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Apply cooking spray in a 9×13-inch baking pan.
In a mixing bowl, add eggs and cottage cheese. Whisk until well mixed.
Add the butter and whisk until well blended.
Add the cayenne pepper and onion, then stir until well mixed.
Add the broccoli, 1 cup cheddar cheese, and cornbread mix. Stir until well combined.
Transfer the batter into the prepared pan and spread it evenly.
Sprinkle the rest of the cheese over. Feel free to add more cheese if you prefer.
Place it inside the preheated oven and bake for about 40 minutes or until the top turns golden brown.
Remove from the oven and allow it to rest for a few minutes at room temperature.
Serve warm and enjoy!
