Ingredients:
40 oz (approximately) Zucchini, large, sliced ¼ inch thick
1 tsp Salt
2 tbsp Butter
5 oz Onion, diced
2 cloves Garlic, minced
½ c Heavy Cream
6 oz Gruyere Cheese, grated and divided
4 oz Parmesan cheese, grated and divided
Directions:
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Slice the zucchini into small cuts, then season both sides with salt.
Arrange them onto a clean plate lined with paper towels, then allow them to dry up for about 15 minutes on each side.
Arrange the zucchini slices into a baking dish.
Place a large skillet on the stove and turn the heat to medium.
Add the butter and allow it to melt.
Add the onion and sauté until translucent.
Add the garlic and sauté until aromatic.
Add the heavy cream and stir until well mixed.
Add about 2 oz. of Parmesan cheese and 4 oz. of Gruyere cheese. Stir until well blended and melted completely.
Spread the mixture over the zucchini.
Cover the entire dish with aluminium foil.
Place it inside the preheated oven and bake for about 15 minutes.
Remove the cover and sprinkle the remaining cheeses over.
Bake for another 5 minutes or until the cheese has melted completely.
Remove from the oven and allow it to cool for a few minutes at room temperature.
Serve warm and enjoy!
