Ingredients:
2 cups shredded rotisserie chicken
1 onion, chopped
can black beans, drained
1 tablespoon extra-virgin olive oil
1 cup enchilada sauce
Juice of 1 lime
2 garlic cloves, minced
1 cup Monterey Jack cheese
2 cups cooked white rice
1 cup cheddar cheese, divided
6 large flour tortillas
kosher salt
Freshly ground black pepper
Chopped cilantro, for serving (optional)
Hot sauce, for serving (optional)
Sour cream, for serving (optional)
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a large skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the onion and sauté until translucent.
Add the garlic and sauté until aromatic.
Add the chicken and ½ cup of enchilada sauce. Stir until the chicken pieces are well coated by the sauce.
Add the lime juice, salt, and pepper. Stir until well mixed.
Place a tortilla onto a flat surface, then add a spoonful of rice and beans in the middle.
Add the chicken mixture on top of the beans.
Sprinkle cheese on top of the chicken mixture, then roll the burrito. Repeat the process with the rest of the ingredients.
Arrange the burritos into a casserole dish.
Pour the rest of the enchilada sauce on top of the burritos and spread it evenly.
Sprinkle a generous amount of cheese over the burritos.
Place them inside the preheated oven and bake for 15 minutes or until the cheese is melted completely.
Remove from the oven, then sprinkle cilantro on top.
Serve hot with hot sauce and sour cream. Enjoy!
