I love puff pastry. I always have a stash because you never know when you need them. Puff pastry is an awesome way to make an easy, yet elegant appetizer. I use puff pastry all the time! INGREDIENTS
1 egg, beaten
1 tbsp olive oil
12 slices prosciutto
1 tsp dried thyme
1 bunch of asparagus, woody ends trimmed off
Kosher salt and freshly ground black pepper, to taste
2 sheets frozen puff pastry, thawed
8 ounces Gruyere cheese, grated
How to make Cheesy Asparagus Puff Pastry Bundles
Step 1: Prepare the oven. Preheat it to 425 degrees F. Using parchment paper, line a baking sheet.
Step 2: Roll the puff pastry sheets on a lightly floured surface. Into 6 squares, cut each rectangle.
Step 3: In olive oil, thyme, salt, and pepper, toss the trimmed asparagus. Set aside.
Step 4: Arrange a slice of prosciutto (folded in half if needed) on each square of puff pastry. Then, top with 3 to 4 spears of asparagus and around 2 tbsp cheese.
Step 5: Lift the two opposite corners of the puff pastry, then wrap them around the asparagus, pressing to seal.
Step 6: Using beaten egg, brush the puff pastry and sprinkle with extra salt and pepper.
Step 7: Place in the preheated oven and bake for about 12 to 15 minutes or until golden and puffed.
Step 8: Remove from the oven when done and serve the cheesy asparagus puff pastry bundles right away. Enjoy!
