Breakfast will never be boring ever again! This Cheesy Amish Breakfast Casserole is legit! I am so glad that I tried it because I never would have tasted perfection. Everything about this dish is amazing, From the cheese to the potatoes. Every bite will make you hungrier. Give this one a try and be amazed at how a simple recipe could make the rest of your day, awesome! By the way, be very generous with the cheese. This recipe would be boring if it lacks cheese. Ingredients:
1 pound sliced bacon, diced
1 sweet onion, chopped
4 cups frozen shredded hash brown potatoes, thawed
9 large eggs, lightly beaten
2 cups shredded Cheddar cheese
1 ½ cups small curd cottage cheese
1 ¼ cups shredded Swiss cheese
Directions:
Step 1: Ready the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in a 9×13-inch baking dish.
Step 3: Place a large skillet on the stove and turn the heat to medium-high.
Step 4: Add in the bacon and onion. Cook for 10 minutes or until the bacon is greasy and the onion is translucent.
Step 5: Drain the excess oil and put the bacon and onion into a large mixing bowl.
Step 6: Add in the eggs, potatoes, cottage cheese, Cheddar cheese, and Swiss cheese into the bowl. Stir until well mixed then transfer the mixture into the greased baking dish.
Step 7: Place inside the preheated oven and bake for 45 to 50 minutes or until cheese is melted and the eggs are cooked.
Step 8: Remove from the oven and let it sit on a wire rack to cool for at least 5 minutes.
Step 9: Slice into 12 small cuts. Serve and enjoy!
