Ingredients:
1 ½ lbs. chicken breast, cut into bite-size chunks
Seasoned Rice Flour
⅓ c canola or vegetable oil
8 oz. Cashews
Rice Flour Batter
6 green onions, cut into ¼″ pieces
Spicy Soy-Sherry Sauce
SEASONED RICE FLOUR
⅛ tsp Baking Powder
⅛ tsp Paprika
¾ c Rice Flour
¼ tsp Kosher Salt
⅛ tsp Ground Black Pepper
RICE FLOUR BATTER
1 ½ c Ice Water
¼ c All-Purpose Flour
1 ½ c Rice Flour
¼ tsp Kosher Salt
¼ tsp Ground Black Pepper
SPICY SOY-SHERRY SAUCE
¼ c Sherry Wine
2 tbsp red wine vinegar
1 c Hoisin sauce
2 oz. fresh garlic, minced
¼ c soy sauce
¼ tsp Crushed Red Chili Flakes
¼ c granulated sugar
1 tbsp Sriracha sauce
Directions:
For the Seasoned Rice Flour:
In a mixing bowl, add all the ingredients for the seasoned rice flour. Whisk until well combined.
For the Batter:
In another mixing bowl, add all the ingredients for the batter. Whisk until well mixed.
For The Sauce:
In another mixing bowl, add all the ingredients for the sauce. Stir until well blended.
For the Dish:
Add the chicken pieces into the bowl with the seasoned flour, then toss until well coated.
Transfer the coated chicken pieces into a large bowl, then pour the batter over. Toss until well mixed.
Place a large pan on the stove and turn the heat to medium-high.
Add canola oil and allow it to become hot.
Add the coated chicken pieces, then cook per side for about 3 minutes or until they turn golden brown.
Pour the sauce as well as the green onions and cashews. Toss until well mixed.
Cook for about a minute, then remove from the heat.
Sprinkle freshly chopped parsley, crushed cashews, and sesame seeds on top.
Serve and enjoy!
