Ingredients:
1 ½ lbs. chicken breast, cut into bite-size chunks
Spicy Soy-Sherry Sauce
⅓ c canola or vegetable oil
Seasoned Rice Flour
6 green onions, cut into ¼″ pieces
Rice Flour Batter
8 oz. Cashews
SEASONED RICE FLOUR
⅛ tsp Paprika
¾ c Rice Flour
⅛ tsp Baking Powder
¼ tsp Kosher Salt
⅛ tsp Ground Black Pepper
RICE FLOUR BATTER
¼ c All-Purpose Flour
1 ½ c Rice Flour
1 ½ c Ice Water
¼ tsp Kosher Salt
¼ tsp Ground Black Pepper
SPICY SOY-SHERRY SAUCE
¼ c Sherry Wine
2 oz. fresh garlic, minced
¼ c soy sauce
1 c Hoisin sauce
¼ c granulated sugar
1 tbsp Sriracha sauce
¼ tsp Crushed Red Chili Flakes
2 tbsp red wine vinegar
Directions:
For the Seasoned Rice Flour:
In a mixing bowl, add all the ingredients for the Seasoned Rice Flour. Whisk until well combined.
For the Batter:
In a mixing bowl, add all the ingredients for the batter. Stir until well mixed, then place it inside the fridge to chill.
For the Sauce:
In a mixing bowl, add all the ingredients for the sauce. Stir until well mixed.
For the Dish:
Add the chicken into the flour mixture. Toss until well coated and shake off any excess.
Add the batter into a large bowl, then add the chicken. Toss again until well coated.
Place a large pan on the stove and turn the heat to medium-high.
Add canola oil and allow it to become hot.
Add the chicken pieces and cook each side for about 3 minutes or until they turn golden brown.
Add the cashews and sauce, then stir until well blended. Add the green onions as well and toss until the chicken are well coated.
Cook for another minute or until the texture of the sauce becomes thick.
Sprinkle parsley, crushed cashews, and sesame seeds on top.
