These Cheesecake Cookie Bars were my favourite growing up! I used to carry these around in my lunch box whenever I went to school. I would brag about these heavenly treats to my classmates! Ingredients:
2 Eggs
¼ c milk
2 (8 ounce) packages cream cheese, softened
½ c white sugar
1 tsp vanilla extract
2 tbsp lemon juice
2 c all-purpose flour
1 c chopped walnuts
⅔ c butter
⅔ c brown sugar
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
In a mixing bowl, add butter, walnuts, brown sugar, and flour. Whisk until well mixed.
Add ½ of the crust mixture into the bottom of a 9×13-inch baking pan.
Place it inside the preheated oven and bake for 15 minutes or until it turns brown.
Remove from the oven and let it rest at room temperature.
In a mixing bowl, add white sugar and cream cheese. Stir until well mixed.
Add milk, eggs, and vanilla extract. Beat until well combined.
Pour the mixture on top of the baked crust and spread it evenly.
Sprinkle the rest of the crust mixture over the baked crust.
Put it back inside the oven and bake for another 25 minutes or until done.
Remove from the oven and allow it to cool at room temperature.
Serve and enjoy!
