This Cauliflower Rice Casserole with Chicken and Broccoli is very delicious and healthy at the same time! It has everything you would wish for in a casserole dish. Chicken, cauliflower rice, cheese, and veggies, it’s hard not to fall in love with this one. Enjoy!
Ingredients:
4 c uncooked cauliflower rice
1 bell pepper, finely diced (green if keto)
1 rotisserie chicken, shredded
2 tablespoons corn starch or tapioca starch
1 ½ c of old cheddar cheese, shredded, divided
1 ½ c milk
2 teaspoons sweet paprika
½ teaspoon ground pepper
4 teaspoons dried oregano
1 ½ c fresh mozzarella cheese, shredded, divided
1 teaspoon dried, powdered garlic
2 teaspoons dried, powdered onion
½ c cream cheese, lite or regular for keto
Parsley for garnish
½ -1 teaspoon sea salt omits for children
1 head of broccoli, cut into very small florets
1 teaspoon chili powder, optional, and to taste
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Apply cooking spray to a 13×9-inch casserole dish.
Mix cornstarch and milk into a mixing bowl.
In a separate mixing bowl, add the milk mixture, broccoli, salt, chicken, cauliflower rice, 1 cup mozzarella cheese, bell pepper, pepper, garlic, chili, 1 cup cheddar cheese, oregano, and paprika. Stir everything until well incorporated.
Transfer the mixture to the prepared casserole dish and spread it evenly.
Sprinkle the rest of the mozzarella and cheddar cheese on top.
Place it in the preheated oven and bake the casserole for about 45 minutes or until the top turns golden brown.
Remove the casserole from the oven and allow it to rest for a few minutes at room temperature. Garnish with freshly chopped parsley.
