GREEK TURKEY BURGERS

PREP TIME: 15 mins | COOK TIME: 15 mins | TOTAL TIME: 30 mins | YIELD: 5 SERVINGS

Enjoy all your favourite Greek flavours with these bad boys. Serve these with or without the bun. Either way, no one can complain because these Greek Turkey Burgers are high rocket delicious!

INGREDIENTS

1 ½ lb 93% lean ground turkey

1 tbsp minced garlic

1 tsp ground cumin

2 tsp dried oregano

1/3 c Kalamata olives, finely chopped

3 oz crumbled feta cheese

1 c finely chopped and packed fresh spinach

Pinch each of sea salt and black pepper

Olive oil spray

HOW TO MAKE GREEK TURKEY BURGERS

Step 1: Prepare the oven. Preheat it to 420 degrees F.

Step 2: In a large bowl, add the ground turkey, garlic, cumin, dried oregano, Kalamata olives, feta cheese, fresh spinach, and a pinch of sea salt and black pepper. Mix well to combine.

Step 3: Scoop out and roll into a ball a large fistful of meat. Flatten to make around 1 1/2-inches thick patty. Do this for the rest of the meat to make 5 large patties of the same size.

Step 4: Make a slight dent in the centre of the patties using your thumb to block the patties from developing a dome as they cook.

Step 5: Lightly spray with olive oil a large oven-safe skillet set over medium-high heat. Once the hot, add the patties and cook for about 3 to 4 minutes on one side until the edges are seared and brown. Flip and cook the other side for a minute more.

Step 6: Transfer the skillet into the preheated oven and bake for about 11 minutes until the internal temperature reached 165 degrees F.

Step 7: Alternatively, place the patties on a baking sheet lined with parchment paper or aluminium foil and bake in the preheated oven for about 8 to 10 minutes.

NOTES:

Serve as a burger in a toasted whole wheat bun with butter lettuce, cucumber slices, thin red onion slices, sliced tomato, and a bit of Greek yoghurt instead of mayo.

Or you can enjoy this alongside a salad, rice, quinoa, or even roasted vegetables.

PUMPKIN CREAM CHEESE MUFFINS

These moist and perfectly spiced Pumpkin Cream Cheese Muffins are the perfect fall breakfast treat. Delicious, light with a lovely cream cheese swirl topping that I love so much!

INGREDIENTS

1/2 c white whole wheat flour, King Arthur

3/4 c unbleached all-purpose flour, King Arthur

3/4 c raw sugar

1 tsp baking soda

2 tsp pumpkin pie spice

1/4 tsp nutmeg

1/4 tsp cinnamon

1/4 tsp salt

1 1/2 c canned pumpkin, not pumpkin pie filling

2 tablespoons coconut oil

1 large Egg

1 1/2 teaspoons vanilla extract

baking spray

CREAM CHEESE TOPPING (makes 3/4 cup):

5 ounces 1/3 less fat cream cheese

2 tbsp raw sugar

1 large Egg yolk

1 tsp vanilla extract

HOW TO MAKE PUMPKIN CREAM CHEESE MUFFINS

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Use paper liners to line a muffin tin and oil to lightly grease the liners.

Step 3: Add the whole wheat flour, all-purpose flour sugar, baking soda, pumpkin spice, nutmeg, cinnamon, and salt in a medium bowl. Using a wire whisk, mix until the ingredients are well incorporated, then set aside.

Step 4: Beat the pumpkin puree, oil, egg, and vanilla in a large bowl at medium speed until thick, scraping the sides of the bowl.

Step 5: Add the dry ingredients to the wet ingredients. Beat at low speed until well mixed but don’t overmix.

Step 6: Place the cream cheese in a large bowl and beat until smooth. Add in the sugar, egg yolk, and vanilla extract, beating slowly until incorporated.

Step 7: Transfer the batter into the lined and greased muffin tin, then cut a tbsp cream cheese over each muffin. Carefully swirl the frosting with a toothpick from the edge to the middle of the batter.

Step 8: Place the muffins on the middle rack of the preheated oven. Bake for about 24 to 26 minutes or until a toothpick inserted in the middle of the muffin comes out clean.

Step 9: Once done, remove from the oven and allow the muffins to cool before serving.

I tried store-bought immunity shots in the past, and they’re not cheap! I am a busy woman, thus I need something to wake my senses up in the morning and keep me going. I benefited a lot from immunity shots so, I didn’t mind how expensive they are. But not after I stumbled upon this easy wellness shot recipe. This Citrus Immunity Shot saves me money and gives me the same benefit along with living and eating healthy, too.

I suffered from a lot of sickness in the past, so I think I can say that I learned my lesson. I am prioritizing myself more. I follow a strict routine that naturally boosts my immunity and reduce stress.

INGREDIENTS

1 medium grapefruit, peeled

1 medium orange

½ medium lemon

1 (1″) piece fresh ginger root, peeled

1 (1″) piece fresh turmeric root, peeled

½ clove garlic

Pinch freshly ground black pepper

HOW TO MAKE CITRUS IMMUNITY SHOT

Step 1: Place the (whole) grapefruit, juice from the orange and lemon, ginger, turmeric, garlic, and pepper in a blender. Blend until smooth and if needed, adjust the taste accordingly.
